Fig and apple chutney ingredients
- 2 tbsp unsalted butter
- 2 cups finely chopped white onion
- 1 apple, peeled and finely chopped
- 1/4 cup brown sugar
- 1/2 cup white balsamic vinegar
- 1/4 cup fig jam
Preparation
Melt butter over medium heat in a medium pot. Add onions and sauté for 5 minutes, until soft and slightly caramelized. Add apple and sugar and cook for 5 minutes more, stirring frequently.
Add vinegar and fig jam, stirring to combine. Reduce heat slightly and cook for 30 minutes, until chutney is soft and less syrupy.
Sandwich ingredients
- 4 tbsp unsalted butter
- 8 slices whole wheat or dense white artesian bread
- 6 oz extra old white cheddar, sliced
Preparation
Butter bread slices on one side. Lay half the slices buttered side down; top with cheddar, chutney and rest of bread, buttered side out. Cook in a grill pan for 2 or 3 minutes per side, until toasted
