Roquefort dressing ingredients
- 5 oz Roquefort cheese
- 3 tbsp freshly squeezed orange juice
- 1/4 cup thick yogurt
- 1 clove garlic, minced
- 1/4 cup milk
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
Preparation
Crumble the Roquefort cheese. Divide into thirds and reserve one-third. Put the remaining two-thirds cheese in a blender with the rest of the dressing ingredients. Mix until smooth, about 20 seconds. Pour the dressing into a small jar and stir the reserved crumbled cheese through the dressing.
Salad ingredients
- 1 pear, chopped
- 1 head radicchio, sliced into ribbons
- 2 stalks celery, chopped
- 1/2 head fennel, sliced
- 1/2 cup toasted pecans (optional)
Preparation
Mix all the salad ingredients together. Dress with desired amount of dressing.
