Date squares
Ingredients:
1 cup pitted dates, chopped
1 cup orange juice
1 cup demerara sugar
1 1/2 cups old-fashioned rolled oats
1 1/2 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup cold unsalted butter
Preheat oven to 350F. Add chopped dates and the orange juice to a small saucepan and cook over medium heat until the mixture thickens, about 12 minutes. Set date mixture aside to cool.
In a large bowl, stir together demerara sugar, rolled oats, flour, salt, baking soda, cinnamon and nutmeg. Using your fingertips, pinch the cold butter into the dry ingredients. Toss together with your hands until the dry mixture is crumbly and coarse.
Press half of the crumble mixture into the bottom of a 9-inch square pan. Spread the cooled date mixture evenly over the base and top with the remaining crumble, pressing layers gently together to stick. Bake for 30 minutes. Remove from the oven and allow to cool completely before cutting into squares.
