While you may never have heard the word 'charcuterie' before, you most certainly have seen it in the grocery store: While originally a French term for cured pork, charcuterie now encompasses any number of cured meats found at the deli counter.
There are entire festivals dedicated to the craft of charcuterie in France, but experts say the best meats come from Spain, Portugal, Andorra and Gibraltar, an area known as the Iberian Peninsula.
When selecting cured meats in the grocery store, look for products with fat that is white and firm, without yellow or green tinges.
